Palestinian Kunafa
Shredded kataifi pastry baked over sweet cheese until golden and crisp, soaked in orange blossom syrup and finished with crushed pistachios.
Kunafa is one of the more technical desserts in the region’s repertoire, but very little of that difficulty is about skill — it’s mostly about ratios and timing, which makes it forgiving once you understand the two rules that matter: buttering the kataifi thoroughly, and always pouring cold syrup onto a hot pastry, never the reverse.
Traditional versions use akkawi or nabulsi cheese, both mild, slightly salty white cheeses that hold their shape when melted without becoming stringy. They can be hard to find outside Middle Eastern grocers, so this version leans on a mozzarella-ricotta blend, which gets close for a lot less effort — worth switching to the real thing if you can source it.
Nablus, in the West Bank, is considered the dessert’s home, and kunafa nabulsiyeh remains the reference version most other regional variations are measured against.
Ingredients
- 1 lb kataifi (shredded phyllo) dough, thawed
- 3/4 cup unsalted butter, melted
- 2 cups low-moisture mozzarella, shredded — or a mix with akkawi/nabulsi cheese if available
- 1 cup ricotta cheese
- 1 1/2 cups sugar
- 1 cup water
- 1 tsp lemon juice
- 1 tbsp orange blossom water
- 1/2 cup crushed pistachios — for garnish
- a few drops orange or red food coloring — optional, for the traditional color
Method
- Make the syrup first
Combine the sugar, water and lemon juice in a saucepan and bring to a boil, stirring until the sugar dissolves. Simmer for 8-10 minutes until slightly syrupy, then remove from heat and stir in the orange blossom water. Let it cool completely — cold syrup on hot kunafa is what gives it the right texture.
- Prepare the kataifi
Pull apart the shredded kataifi dough with your fingers to loosen the strands, then toss thoroughly with the melted butter until every strand is coated. If using, mix in a few drops of food coloring for the traditional orange hue.
- Layer the pan
Press two-thirds of the buttered kataifi firmly into the base of a greased 9-inch round pan, building a slight edge up the sides. Mix the mozzarella and ricotta together and spread evenly over the base layer, then top with the remaining kataifi, pressing down firmly so it holds together.
- Bake
Bake at 375°F (190°C) for 30-35 minutes, until deep golden brown on top. If the top isn't browning evenly, a few minutes under the broiler at the end helps, watched closely.
- Soak and serve
As soon as it comes out of the oven, pour the cooled syrup evenly over the hot kunafa — you should hear it sizzle. Let it sit for at least 10 minutes to absorb before slicing, and scatter crushed pistachios over the top just before serving.
