Why does the conversion depend on which ingredient I pick?

How accurate are these conversions?

They're based on standard reference densities and are accurate enough for home cooking. For baking where precision matters most, weighing ingredients on a kitchen scale is still the most reliable method.

What if my ingredient isn't in the list?

Use the closest equivalent by texture — for example, treat semolina similarly to fine cornmeal, or bulgur similarly to rice. More ingredients are being added regularly.
