Why is the air fryer temperature lower than the oven temperature?

Air fryers are small, high-powered convection ovens — the fast-moving hot air cooks food faster than a regular oven at the same temperature. Lowering the temperature by about 25°F (20°C) and checking a few minutes early gives a similar result to the original oven recipe.

What's a gas mark?
